Sushi Pocket ってなんだかわかりますか?いなり寿司のことです。Inari-zushiとしてもいいのかもしれませんが、このネーミングが結構気に入ってしまいました。このネーミングは
英語でつくる和食という本から頂戴しました。近所に住む日本人の友人から借りたこの本は、基本的な和食レシピがずらり。しかも英訳付きで、和食に興味のある外国の人に簡単に作り方を教えられるという次第。今回、我が家のいなり寿司のレシピをこの本を参考に英訳しました。料理用語って、なかなか英語にするのに慣れていなくって、自力でやっていたら時間がかかったと思います。
汁気がなくなるまで煮詰める、人肌にさめたら...などの表現、この本のおかげで簡単に英訳できました。いろんな分野の英語の言い回しを知るのって、なかなか勉強になりますね。
なぜ、いなり寿司のレシピの英訳をしたかというと、ジロのクラスの担任、ジェシーのお別れ会の記念品作りのためだから、です。ジロの大好きなジェシーはクリスマスの後、ニュージーランドで新生活を始めます。約一年半お世話になった今のGroup2の生徒たちと親は、感謝の気持ちをこめて、お別れ会と、その時に記念品を渡す計画を立てています。
G2のContact parentsであるエリザベスは(ハロウィンパーティに招待してくれたママ)、この種のアイデア、企画がすばらしい!!彼女のアイデアはこうです。クラスメイトの親から一人一人、各国のレシピを集めて International cook bookを作る!なんて素晴らしいアイデア!写真を添えて、さらにその料理にまつわる言い伝えや、エピソードをもりこんだ、オリジナルのcook bookです。さらに、子供達一人ずつ絵を描かせ、それをスキャナで取り込んでデザインし、エプロンを作る。さらにさらに、子供達にジェシーとの思い出を語らせ、ビデオに撮って、DVDを作る.....。コストは一人5ユーロ。追加で2ユーロ出すと、このcook bookとDVDを買うことができます。ジロのクラスは総勢18人。国籍は10カ国。18ものインターナショナル・レシピが揃います。楽しみ、楽しみ。
我が家のいなり寿司は栗原はるみ氏のレシピで、なかにちらし寿司の具が入ってます。ニュージーランドで材料を調達するのは大変かな。でも実際作るかどうかはともかく、まあ日本を代表する家庭のお寿司かな、と思って、いなり寿司に決定した訳です。

SUSHI POCKET ( INARI-ZUSHI )
Delicious combination of sweet and salty abura-age deep-fried tofu and vinegared rice.
Originally, sushi was fish pickled for preservation. But in the Edo period, people in Edo started using fresh fish instead of pickled fish. They put raw fish slices or shellfish on top of small vinegared rice balls which were rolled by hand. This is called “ nigiri-zushi” typically known as “sushi” in Japan and all over the world.
This SUSHI POCKET is a casual style sushi which is the most popular at home in Japan. Jiro likes this sushi very much!
Ingredients (serves 2 or 3)
*Vinegar rice*
400ml rice, 400ml water, 10cm konbu kelp, 1Tbsp white parched sesame
A 50ml vinegar, 2Tbsps suger, 1/2tbs salt
*Vegetables*
80g lotus root, 40g carrot, 4 dried shiitake mashrooms
B 60ml stock, 2tbsps soy sauce, 2tbsps mirin(sweet cooking sake), 2tbsps suger
*Abura-age*
6 slices abura-age
C 2Tbsps stock, 1/2Tbsp soy sauce, 1/2Tbsp mirin, 1/2Tbsp suger
Directions
1, Make vinegar rice
1) Wash the rice 30min prior to cooking, and drain on a sieve.
2)Place the rice, water and konbu into a rice cooker, and cook.
3) When rice is cooked, sprinkle the vinegar dressing A all over the rice. Using a flat wooden spoon, toss the rice with horizontal cutting strokes while cooling the rice with a hand-fan.
2, Prepare vegetables as follows
1) Soak the dried shiitake in cold water to soften. Remove the stems and slice thinly.
2)Peel the carrot and cut into 2~3cm julienne.
3) Peel the lotus root and slice into either half-moons or quarter-rounds thinly. Immerse them in vinegar added water.
4 Put the shiitake, carrot and lotus root in boiled B. Continue to simmer until the liquid is almost gone.
3, Prepare abura-age as follows
1) Place the abura-age on a cutting board, and roll one cooking chopstick over it to make it easy to open. Cut the abura-age in half lengthwise, and open each pocket using the fingertips.
2) Boil the abura-age to remove excess oil. Place the abura-age in C and simmer for about 5 min.
4, When the vinegared rice is cooled to body temperature, mix it with the parched sesame as well as shiitake, carrot and lotus root prepared in 2.
5, Squeeze the abura-age lightly to remove moisture. Fill each abura-age pocket with the vinegared rice. Adjust the shape and fold the opening.
